Creative Confections
Catherine Rork is owner of Creative Confections specializing in gorgeous cakes and cupcakes for all occasions. Catherine’s Minnie cake was made with all organic materials and the animal cupcakes pictured are 100% vegan. How does she do it? Well, one of the most reactive ingredients in non-organic baking is synthetic food coloring, so Catherine utilizes organic colorings from India Tree or Seelect Herb & Tea Company. These colorings are derived from plants so no Red Dye #5. Catherine hand selects ingredients using baking staples (i.e. flour & baking soda) as well as brown rice, applesauce, almond milk and/or soy milk. She also leverages vegan confectionary sugar from Woodstock Foods.

Mimi’s Cookies
Michele Braun is owner of Mimi’s Cookies. Mimi’s Cookies specializes in beautifully hand-wrapped cookie creations. These 100% organic sugar cookies with royal icing were made especially for a New Jersey Bunco group in honor of Hurricane Sandy victims. Michele is also a fan of India Tree for their concentrated organic vegetable colorants and she understands the importance of avoiding corn syrup and synthetic dyes. She uses ingredients such as vegan cane sugar, unbleached flour, and organic baking powder (aluminum free).

Lisa Pisano is owner of LMD Biscotti Company and founder of mommy blog – Mom a La Mode. As any Italian can tell you, there should always be biscotti on-hand to go with your cappuccino, so make sure to incorporate these cookies into your holiday assortment. LMD Biscotti makes gift wrapped delights including double chocolate biscotti, chocolate dipped chocolate biscotti and fleur de sel dusted dark chocolate biscotti.
LMD’s biscotti are typically made with non-organic flour, sugar, cocoa powder, eggs and butter, but Lisa was up for the Hip and Healthy Kids challenge to replace all conventional ingredients with organic ones. With the right organic ingredients (seen here) on hand, and she was ready to bake.
